Raisin Scones

I made scones today, and they came out amazing! It's a typical English mid afternoon cake break which goes greatly with some jam! And don't forget some tea ;)

  • INGREDIENTS:

    225g self raising flour
  • 2 pinches of bicarbonate of soda
  • 55g butter (I used about 25/30g though)
  • 25g caster sugar
  • 150ml milk
  • 1 free-range egg, beaten
     raisins

Mix the flour, the bicarbonate of soda, and the butter. You will get a granular mixture. Add the milk and the sugar, and raisins if you like them and mix well. Careful it will get sticky!! Lightly grease a baking sheet and heat oven at 220°. Turn on to a floured surface and knead lightly, leave it to about 2 cm height. Then with the help of a glass cut small circles and place onto greased baking sheet. Paint the top of the scones with the beaten egg. Once you have run out of dough, place all your scones in the oven and bake for 12 -15 mins, they should be a golden brown colour. Once done serve with jam and tea of course ;)
